I finally had all the ingredients in my kitchen, and decided that we were going to eat this chicken for dinner. I’m glad I made it! Frozen tilapia is a good go-to dinner. You know, on those days that you just don’t have time to make something fancy, but still want a healthy dinner? Make this over some rice and serve with a small salad and you have a full meal in very little time. The original recipe called for striped bass, but I only had tilapia on hand, so I made it this way and loved it. Now I do it like this all the time. When I don’t have scallions, I just skip them. My husband is not a fan, anyway, but he loves the soft onions, so although they’re not a part of the original recipe, sometimes I make a swap. Continue reading
You know, I don’t really cook a lot of fish. Unless I’m having company, in which case salmon is my go-to main dish. Obviously, fish is a good dairy main dish for dinner parties, and it also makes a great centerpiece, because look how pretty that big piece of fish looks on top of that bed of root vegetables!
Rhubarb is often paired with strawberries, since they come into season together. Not that I have anything against strawberries, but sometimes you just want the rhubarb to shine. I mean, strawberries are much more widely available, you can always get that flavor, but rhubarb, even here in NYC, isn’t that easy to come by, and it only makes a short appearance at farmer’s markets and specialty stores each spring.
We’ve experimented with just rhubarb desserts before: Tarts and Coffee Cake. Now to add a third rhubarb dessert to our repertoire, here’s a rhubarb pie! Maybe next time will experiment with some rhubarb combinations.
I made mine pareve, but with a nice buttery pie crust, it’s a special Shavuot dessert!
I don’t have that much experience cooking duck. I mean, I made some duck confit a few years ago. And then made some cured duck. But that’s pretty much it. So I was excited to try out this seared duck breast recipe from Anne Burrell. It was Zeke’s birthday, and I wanted to make him a restaurant-quality meal at home. And I did! I’m not sure if it’s just because I have a baby who will be turning one soon or because it’s just a fad, but there’s something about nut milks that I just can’t stop hearing and reading about them wherever I go. Now, nut milk is exactly what it sounds like. A drink made out of nuts. In this case, almonds. It’s not milk in the traditional comes from a mammal who just had a baby way, but it’s a nice dairy-free alternative for baking, drinking, cooking, and definitely marinating meats that you can’t use cow’s milk for (think fried chicken). Ah, one-pot meals! I love them. And I’ve been looking for some easy do-ahead meals, as well. So when I saw Anne Burrell make this chicken and cauliflower dish, I decided it was the perfect thing to make for dinner…It was delicious! The chicken had a strong flavor from all the coriander, the texture of the veggies was great due to the nuts I added, and it was so easy to get dinner on the table. Continue reading
