What? Just because we don’t celebrate Christmas it doesn’t mean we can’t make candy centered around candy canes. In fact, we LOVE candy canes. And we love Danielle’s building because they have a tree with candy canes that we get to eat…the only thing better than candy canes is chocolate with broken candy canes on it. Williams Sonoma thinks it’s okay to sell their peppermint bark for more than $25, so we decided to make our own kosher version of the stuff. It was WAY cheaper and super delicious! May I add that it makes a perfect Hanukkah (or Christmas) gift?Granted, this isn’t as pretty as the stuff you can buy from Williams Sonoma, but it’s kosher, it’s delicious, and there’s something nice about the jagged edges and uneven chocolate layers. It definitely shows that the present was made and given with love.
Ingredients:
For the bottom layer:
- 10.5 ounces bittersweet chocolate
- 1 cap-full peppermint extract
- 1 tablespoon flavorless oil
For the top layer:
- 10.5 ounces white chocolate
- 1 cap-full peppermint extract
- 1 tablespoon flavorless oil
For the crushed candy layer:
- 4-5 chopped/smashed candy canes OR some smashed “starlite mints”
Directions:
1. Chop candy canes. This can be done in big chunks or smaller ones, depending on how you want to make it. If you have a meat tenderizer, use it. If not, you can always use a knife and chop the pieces. We tried to smash the candy canes with a bottle of wine – it didn’t wo rk.
2. Line a baking sheet with wax paper. Spray with cooking spray (just to really make sure it doesn’t stick).
3. Melt bittersweet chocolate, peppermint extract, and oil over a double boiler. When melted, Pour onto baking sheet and spread out into an even layer. Let set in fridge for 20-30 minutes.
4. Melt white chocolate, peppermint extract, and oil over a double boiler. Pour on top of other chocolate, and spread quickly, making sure not to mix the two chocolates.
5. Scatter candy canes over the top. Press them in. Let cool in fridge for another 20 minutes, until hard.
6. Break into small pieces and enjoy!
