Blueberry Coconut Smoothie
This month’s linkup is all about drinks! Cocktails (and mocktails) to serve at your next party. Well, I’m all about my Vitamix these days, and while I could easily whip up a frozen margarita, I am more into making healthy smoothies and drinks. You can add vodka to this if you like, or really anything to make it more of a cocktail. It’s a wonderful drink that quenches thirst and fights cancer! That is, as long as you can crack open that young coconut.

Roasted Vegetable Soup
Fall is here! That means butternut squash and soup weather. Now, I know we always share butternut squash soup recipes with you, but this one is different. This one also has roasted sweet potato and carrot. And coconut milk! Perfect for the rainy and gross weather today.
This is also one of the easiest soup recipes ever. No chopping and stirring, no waiting for the onions and garlic to brown and adding dashes and pinches of things. Just place vegetables in the oven and forget about them until a timer beeps. Then blend it all together. That’s it. It’s delicious and refreshing, and perfect for the cool fall days! Continue reading

Watercress Pesto
Watercress is one of those “super foods” that I’ve been seeing a lot of lately. And summer is all about being healthy, so when I had a bag of watercress just lying in my fridge I racked my brain to see what I could do with it – and pesto was just the ticket! Pesto is a favorite summertime item because it’s so easy to make and extremely versatile. You can use it to dress up sandwiches, as a sauce on pasta, or even to spread over a simple fish or chicken. This pesto recipe is extremely easy to make, as long as you have a food processor or blender on hand.

Stewed Lentils and Tomatoes
These lentils are easy to make, can be made in advance, and are super healthy! Score! You can definitely just chop all the veggies and then throw everything together while preparing a different dish. It’s a great Sunday activity. For some reason, this Ina recipe was never on her show (according to the Food Network site), but it is in one of her cookbooks, which I own, and you can also find it online on her website. Couscous with Sauteed Greens and Tomatoes
I really like couscous, but it can get very boring. So I decided to layer it with some healthy stuff and make it sorta like a lasagna. I thought it was a hit! And so did Richie, who ate two bowls of it for dinner.
I was inspired to make this dish when my friend Danielle told me about a great couscous dish her mother made. Her ingredients were pretty much the same, but she used canned tomatoes and mixed everything together, more like a traditional couscous. Veggie Muffins

I’m really not a fan of hiding vegetables in food. I mean, it’s just sneaky. But, there’s nothing wrong with making muffins out of a bunch of fruits and vegetables and them tasting good! who says it’s hiding? Richie loves watching me cook and bake, and it’s no different when I make these muffins.
